At Holly, we serve a produce-focused cuisine with local influences, inspired by our head chef’s roots in French cuisine. Our dishes, new takes on regional and French classics, are based on regional produce, classic cooking techniques, and an experimental approach to local preparation methods.

About Us

Holly gastrobar was opened in summer 2021 by me, beer and wine sommelier Fernanda Befi and my partner, chef Simon Guitard. It is here that we serve a produce-focused cuisine with local influences, inspired by Simon’s roots in French cuisine. All in the laid back setting of our locale in Berlin-Neukölln.

We celebrate ancient cooking techniques alongside an experimental approach to local preparation methods. We use contemporary and traditional preservation methods such as pickling, curing, smoking, sous-vide, lacto-fermentation, ageing, firing, and dehydration as well as DIY experiments by our young kitchen team.

Our selection of German and French natural wines as well as Berlin craft beers emphasize craftsmanship and regional flavors. We serve drinks well into the night and after our kitchen closes at our bar.
